Pavlova cake – gluten free

This gluten-free dessert is named after the famous Russian ballerina Anna Pavlova. The cake was prepared by the hotel’s chef, who was inspired by her ballet skirt – whipped egg whites with a whipped cream-mascarpone layer. Beautifully garnished with fresh fruit. The individual layers of whipped egg whites are dried for hours, becoming brittle and soft at the same time.

Can also be made in a lactose-free version.
